About the pizza diet
My name is Molly Spencer and I a Ph.D. Candidate in Food Science with a specialty in Sensory and Consumer Sciences. I have a food science education with a little bit of nutrition. I started this blog as an experiment to show that pizza is not all bad. I had always thought that pizza has been given a bad rap and I was able to show that you can eat a balanced diet and maintain and/or improve measurements (weight, body fat, blood pressure, etc.) on a diet of pizza for every meal*. By the way, I love pizza.
I have a lot more food experiments that I am interested in doing, as well as general thoughts on food, food science, sensory science, nutrition, fitness, and graduate school/academia life. This blog is where I share them.
*DISCLAIMER: The pizza I ate has a variety of toppings, including a lot of vegetables. Also, I am supplementing the main pizza meals with snacks sometimes, including fruits and vegetables. If you don't exercise or if you enjoy pizza with lots of meats and extra cheeses, you would likely not have the same results as me and I am not condoning that. I am simply hoping to show that pizza can be part of a balanced diet, and it is a way to adopt a flexitarian diet, in which you decrease your meat consumption and increase your consumption of vegetables and other plant-based foods.
